Reason behind lowering nitrogen in flower stage

Reason behind lowering nitrogen during flower? Some products have seperate grow and bloom. Some dont like the canna coco line and this works well for me. I'm aware of the fact that growing buds will need less N and more PK. But won't the plants just uptake what they need? Thx!
