It's possible a growth tip re-grows, but it'll be much faster and more dependable to just start over.
could leave it off to the side.. not like it needs any light or fertilizer until it re-grows foliage, lol. if it dies, it dies, oh well.
I've seen a growth tip sprout from a decapitated trunk of a harvested plant. When you prune lower growth off, if given long enough new growth tips will grow there. So, it is within the capabilities of a plant, but the time it takes is prohibitive in most cases and the fact this is a very young plant and i'm sure that hurts the chances of success.
