I'm a big defoliation fan, and apply it in every plant I grow.
You should mostly remove leaves that are covering bud, or bud spots, leaves that won't let light pass down on the plant.
Removing all of them isn't a good idea as they work as water reservoirs, and solar panels. The thumb rule is 20% of the foliage at a time, and recommend to feed with nutrients after applying the procedure, so the process isn't so aggressive to the plant. Also, I do it in the light off period,just before switching on and feeding.
