You can use twist/garden ties, something hopefully with a softer plastic. If you just have wire you can always cut a straw and use it as tubing for the wire too.
Just remember the point of LST is to manage the height of your plant, maintain an even canopy, as well as expose your lower growth sites to light as your new growth shades it out.
As your plant matures obviously the stalk with become more rigid meaning you’ll have to bend the stalk at a higher point from the soil.
You can start your LST now, but it will be minimal. You’ll just really need to bend the main to one side of the pot and tie it. It’ll firm up in that shape and you can continue to tie it down as she grows. No harm if you wait a bit too as you’ll probably end up cropping that lower growth in the end anyways.
