Personally, I prefer to harvest when there are 95-98% brown pistils and don't place too much importance in trichome colour, some plants never develop amber trichomes anyhow, and some will have 75% amber after only 4 weeks of flowering.
Once all the pistils/hairs are 100% brown, THC begins to breakdown rapidly into CBN and CBD, two non-psychoactive trichomes which causes more of a heavy/sleepy body stone, unlike flowers picked slightly earlier (95-98% brown) which produce a more mind bending head high.
Let your preferred type of effect, body stone or head high, guide your harvest timing.
