Sounds like your nutrition is not strong enough in solution. If you switch to tap water then you need to charcoal filter the water due to chlorine. The ph is directly effected by the amount of phosphorus in feed. Which is also a ph down. CO2 does not effect ph that much as other dude Said. I grow in dwc. From his answer he does not. If ph swings up day to day you need more blooming nutes. If it goes down then it's too strong. Flowering npk ratio is 1-2-3. Your ec should be around 2 to 4 depending on how big the plant is.

pH will rise or fall in your water typically but shouldn’t need adjusted that often. Possibly switch to tap water to see if that would help you at all? And last thing is it could defiantly be the nutrients you are using that is causing so much fluctuation. pH of water is also directly related to the amount of CO2 inside of it too. If you have high CO2 in your house the pH will go down. If you have low CO2 it will go up. I think try the tap water once and if that doesn’t do anything then limp though, it wouldn’t be ideal but better than nothing. I hope this helps.
