Can someone tell me what these "leaves" above the round cotyledons on the left side are about? I haven't been able to spot these on any other plant, and the other plants of the same strain don't show these "leaves.

The leaves above the cotyledons that are not serrated are the first true leaves. There are plants that develop them this way or not. There are various factors that can influence leaf structure, including genetic variations, environmental conditions, and breeding practices. You don't have to worry. Even with the later serrated leaves, it can sometimes happen that they only have 3 instead of 5-7 serrated leaflets.
