On plants that are about 20 inches tall? Probably nothing too crazy. Greenhouse grows can be a little more hot and humid compared to what most growers are used to working in and defoliation can be useful for eliminating micro-environments that can foster PM(powdery mildew) or botrytis(budrot). Worry less about "what's covering what" and look for pockets that can restrict airflow.

No. Why? What for? Just remember....... Less leaves = less energy being made = less potential growth. The leaves are what produce the energy to make the buds grow!

You can trim off extra fan leaves that are covering up bud sites. It looks like your plant is doing great so this is really a judgement call by you. Since you’re outdoors it can be beneficial to trim inner leaves to get better airflow through the plant to avoid mold issues. That would be what I would do in your situation. I hope this helps

I'd leave her as is. She looks like she's doing fine.

The ones looking inside of plant and covering lower buds - a bit, slowly, 2 -3 max in few days - Yes. Just for better air movement and mold prevention. Sun is 2x more powerful than any light, penetration is way deeper, so if you worry about this, then NO.
