when should I up-pot mimosa evo?

I am afraid of causing ring roots and I have no idea when I should increase the pot size, or if that is even necessary anymore.

They look healthy and I don't think you need to transplant them. They will be root bound "ring roots" but that's normal in pots. Its a good size over all for them. If you where going to up size them though, its best to go with a size that's double or triple its current pot. Eg. 1L 2-3L |OR| 10L 20-30L pot. They will need liquid feeds as top dressing a pot with amendments that's root bound is hard. Does not always work out well so liquid nutrition gets in all the spots that are needed to feed the plant. Also love using a wetting agent to help break surface tension like Yucca. Good Luck!

Depending on the amount of time you have to veg and the space you have. I would even transplant it into something 5 times as large if you were flowering outdoors. but looks like you want to flower inside so you could just stay in those pots if you flower now. but I agree with mouse. If doing one plant Inside and want to transplant would go for around 20-gallon.excuse my imperial system, lol. If you have a month or two of veg they could be 6 feet tall and hungry

40 is really ok pot size for outdoors, but all depends when they will go to flower. few months of veg more maybe would need bigger.
