Watched a few videos on YouTube about defoliation, and I’m still not understanding which fan leaves are to be taken off and when to start doing that?

not needed,
it has a time and place and most often then not, its just not needed.
Defoliation can be used to thin out the dense growth of the plant to help with airflow so bud rot and wpm does not occur. but with a single plant at that age. you'll only be setting it back.
More Leaves = More Growth = Bigger Plant and normally More Buds

If you defoliate any at all now you will slow growth down, especially an auto. They need a good structure both on top and in the root zone to handle any kind of leaf removal. Give it some more time.
