Watched a few videos on YouTube about defoliation, and I’m still not understanding which fan leaves are to be taken off and when to start doing that?

If you defoliate any at all now you will slow growth down, especially an auto. They need a good structure both on top and in the root zone to handle any kind of leaf removal. Give it some more time.
