My closet lacks height, How do i prevent my plants from getting too close from the light and get light burned ?

You plan ahead as much as possible. Expect 50%-200% of the plant height after stretching in pre-flower. Once you know how to handle a given cultivar and how she stretches, then you can further make her stretch less/more with stress.
Adjusting canopy height is hard. Adjusting light fixture height is easy. A board or bar style LED fixture on pulleys is pretty common for this reason.

You used up way too much space with your homemade hydro tower. You're also trying to grow too many plants in too small of a space. Make a low profile rez out of a heavy duty sterilite tote and only run 2 plants in it. With training you'll still fill out your space.

Unfortunately, there's not much you can do about that; you need a flatter light, an LED lamp that is flat so you can gain a few centimeters. But I think the cabinet is only meant as a seedling tent and not for growing large plants; small autos might still work. But all in all, the cabinet is too small.
