Just focs on the trichomes. If they are milky, and some amber you can harvest. The more trichomes are amber, the more your weed will make you feel kinda sleepy. IF you want to find perfect timing for you, you could try out different stages and see how you like the result in comparison

When the triochromes look milky and 80% of the hairs are orange she's ready to be cut and dried.
