Dry cure can convert 10-15% of that at most if it's not sunk. Lo and behold, there is no soil to sink it, so you are smoking it as it will never oxidize, ever. Go do a Google search on the stability of nitrate as a molecule and what happens to it when you smoke it and how long it takes to break down.
