01.05.: Watered with ~60ml. Temperature way too high with 32°C and Humidity too low with 45%. Height: 4cm.
02.05.: Watered again with ~60ml. Since the temperature is still very high I opened the window in the morning. In the afternoon the temperature dropped from 32°C to 22°C and the humidity increased from 45% to 55%. I hope this drastic change in temperature doesn't stress the plant. Height: 4.5cm.
03.05.: I raised the LED to about 7cm above the plant. Temperature 24°C, humidity: 58%, height 4.5cm.
04.05.: The stem starts to look a little purple. I'll keep an eye on that. The whole seedling is tilted a lot too so I stabilized her with too toothpicks to get her to stand up better. I also installed a more powerful LED ~35cm above the plant. Temperature 25°C, humidity: 50%, height 5.5cm.
05.05.: I removed the toothpicks since the plant was standing upright on it's own. Temperature 27°C, humidity: 50%, height: 6cm.
06.05.: Stem might be a little too long. At least it's shaking a lot in the air circulating. I'm thinking of supporting it again but so far all seems ok. Temperature: 25°C, humidity: 50%, height 6cm.
07.05.: Leaves are hanging a little bit down and the tips are starting to curl upwards. I assume it's because she's dehydrated which would make sense since I haven't watered in few days. Gave her ~100ml of water. Temperature: 25°C, humidity: 63%, height 6cm.
Overall my Fat Banana seems like the most developed of my three plants. Even though I hope the stem is not too weak since it's shaking a lot in the breeze. So far everything looks fine and healthy though I hope the bend and curled leaves are really a sign of dehydration and not a problem with the roots. I'm thinking about introducing them to organic fertilizer in the next cupple days.

Stem with a plant height of 6 cm doesnt look too bad in my opinion. I think mine were a bit shorter at this stage, but not a lot. Maybe your "wind" is too strong? I did not let it blow directly on the plants at this stage.
