I think you could have give her at least 2 weeks to get her fully ripen.
I'm also wondering about your wire. Are you sure you understood the principle of LST? Normally you tie down different branches or you even bend the hole plant in a 90 degree angle.

@Europeanliving, 6 mm wire covered with rubber, for tying plants, perfect for LST, it would be better if it were thicker :).
