Mooncat has summed it up well,
The smell will change over time, from flowering to the cured end product you'll notice quite a few aromas…
What many newcomers (myself included) don't pay attention to are phenotype variations, meaning just because you and your brother come from the same mother and father doesn't mean you look exactly the same, you might resemble each other but everyone develops their own characteristics and traits, the same goes for plants grown from seeds… it's different with clones, as it's about preserving the genetics with the desired traits (like in your case strawberry smell/taste), plants from clones are 100% the mother genetics from which the cuttings were taken, but they still tend to adopt slightly individual traits, which can be overlooked…
So in short, it can take 1000 seeds before you have the desired traits of a plant, then you need to be far enough along to conserve the genetics (mother plant) to be able to make clones from it… if you have questions feel free to write. Best regards
