To me they look thirsty, not over watered. After transplanting you need to give them a really good drink because it will take a little while for the roots to sort themselves out and recover from any damage caused during transplanting, which will occur, no matter how careful you were. During this recovery period, their ability to "scavenge" water in the substrate can be compromised, hence the drooping leaves. Since you are growing in coir with perlite, over watering to damage level is quite an achievement, so this is unlikely the cause of the drooping. You really should be watering from edge to edge and until run off, otherwise there is no way to tell if the water has penetrated the entire depth of the pot - after all, the roots will certainly be all the way to the bottom soon enough, as long as the substrate is moist. Roots, obviously, will not "explore" and expand into dry areas, nor will previously added dissolved nutrients be available. Giving them 2-3 litres to fully moisten the substrate, would not be out of the question. After this, I expect your plants to once again become fully hydrated and perk up within an hour or so.
