Heat my dude, what you stated seems a bit too cold. Maybe, add some phosphorus (cellular energy, like material sunlight, kinda) and carbs/sugars/oils, like specifically. I dunno what your nutrient mixes are like so it's kinda difficult to speculate regarding that, very tentative "advice". The thing with topping (though other forms of stress too) is that it irreversibly alters the plant hormonal balance and function, so you can get kinda weird results at times. Aside from that, In general, my feeling is that people often use too much magnesium and potassium (curled, very dark leaves with colour gradiation, many nodes, smaller fruits). Fun fact btw, life may not be so much carbon-based as phosphorus based...check it: https://www.airspacemag.com/daily-planet/phosporus-you-cant-have-life-without-it-least-earth-180967243/ https://www.airspacemag.com/daily-planet/phosphate-problem-origin-life-may-be-solved-180973899/

"However much exists on other worlds, there’s no question phosphorus is vital to life on Earth. It is the nutrient most highly valued by organisms, as well as the most recycled. Its ability to promote growth and reproduction is why it’s included in fertilizers. My own opinion is that life as we know it—including us—could be called phosphorus-based rather than carbon-based, because phosphorus is about 100 times more enriched than carbon in our bodies, compared to the background amounts of each element in the natural environment." Just a copy/paste from one of those articles. Your plants are still fairly young though, they might still bulk appreciably.

Sorry, forgot to mention, the reason I mention heat first is because of the foxtail/airy sort of look (and I've grown plants through winter and they do similar things).
