I agree with Magoo’s comment for sure besides the root washing. I don’t flush my plants anymore but especially since you are using FOOP don’t do that! Mephisto strains are notorious for throwing white pistils thru flower so don’t judge by that solely as an indicator to harvest. Check more of the trichs lower down for amber but you are close for sure!

The photo taken with the microscope seems to be a sugar leaf. Trichomes on the on the sugar leaves goes amber well before the ones on the buds, as they are more exposed to the light. You should check the buds. My educated guess: at least two or three weeks. You might start to wash the roots in a week, then wait two more before harvesting.

The pistils are mostly all white.. its really not even close to done

It looks pretty close. If you could take pictures of the pistils a little closer I could tell you for sure. I usually wait until week 9 or 10 though.
