I realize that I won't be able to keep the humidity consistently below 50%. Do you think I should invest in a dehumidifier? (Sensor at plant height)
I don't want to risk mold forming on the buds.

It depends on how much humidity you have during flowering; 60% is also okay. As an alternative, maybe increase the airflow or set the fans to a higher setting.
