You should always water the entire pot. Don't overthink it.
if you think it's been overfed and need to dilute the substrate a bit, the extra water-only irrigations are a good idea. Remember to adjust your formula going forward to avoid the problem next time.
quicker dry times aren't necessarily a good thing, unless it's taking 3 weeks to dry and you are growing mold in the meantime. If it's not taking longer than 2 weeks, you really don't need to do that, either, and it's possible a faster dry time (if extreme) reduces quality of end result.
how often you fertigate vs irrigate is simply a matter of how concentrated the fertigation is. More than one way to skin that cat.
