Well it looks like one plant is just small and the other has that weird "dr grinspoon"" trait. Dr. Grinspoon is a strain name. It grows like that - elongated stems with few or individual calyxes spread out. It's not a good trait to have. The dr. grinspoon plant was popular because it was super frosty compared to most of its counterparts at the time. you can find strains with high potency without that trait, so it's one to avoid.
Don't strip leaves. that's some urban myth bro-science nonsense. There should always be a very good reason to remove a leaf. Check out the guides on cocoforcannabis.com. Like i said before, start fresh. Purge beliefs and rebuild a better foundation of knowledge. I don't think stripping the leaves caused that popcorn plant, but it definitely didn't help and definitely reduced potential size of the plant. Stripping excess leaves can cause the plant to 'search' for light, which would mean stem elongation occurring, so it's not out of the realm of possibility, either.
Read up on Daily Light Integral (DLI). This is the proper way to measure light provided. the wiki is sufficient to get the gist.
pots can limit size of plant too. figure 1 gallon per month of growing to avoid any significant limitation. 1 gallon per vertical foot is another simplified rule to follow. Neither of these are perfect rules but should be good enough.
