I wouldnt remove leaves if they are not causing problems. They are your plants solar panels and lungs (CO2), which are essential resources for the plants sugar production and finally the engine for the creation of the plants biomass.
Only remove leaves in the lower third of the plant, unless they are necrotic, falling off on their own or overlapping each other causing wet spots which can be a breeding ground for pathogens
Rather than removing leaves, focus on removing lower nodes which will most likely not become of any value to consume anyways unless youre making hash maybe. But in my opinion its good to have clean "legs" / lower 1/3 of the plant for preventing diseases and pests because of a good airflow.This way you avoid sprinkling soil particles or water with fertilizer onto the leaves while irrigating aswell, as this can cause problems.
I usually remove every node below the 5th one but it depends on your plant, environment and grow style, it can make sense to leave more nodes. Just make sure to clean the lower third aswell as any overlapping/sick or nectroic leaves, which you dont really seem to have.
