I accidentally forgot to test the ph of some recharge I was using on two plants and ended up watering them with a ph of almost 7 when my target range is 5.8 to 6.2 what should I do to make sure they’re okay just let them dry out and plain water next time ?

If that causes a problem it is indicative of a bunch of underlying issues that are more to blame than this.
Just ph-balance it next time and move on. The difference from 7 to 6 is much smaller than 6 to 5, so don't try to balance it with rudimentary math. It's a log scale.
if in soilless, just give a little extra runoff next fertigation and it'll be right as rain. if in soil, just water normally.. your biome will help keep things in a particualr ph-range too.
