Hi :( yes, that's annoying. I can only recommend that if you want to train them, you water them an hour beforehand so they're softer.
Then I'd try using some thick wire and tying them down, that's what I do, and then, step by step, so they don't bend too much all at once. You can test how far they bend with your finger and then fix the wire in place. And it's best when the shoots are nice and young.
For older shoots, I would press the stems a little with my thumb and index finger to soften them. That's how I did it with my White Widow supercrop, and you basically break the stems, but only from the inside, and all the shoots survived.
And my last tip: if they break, use painter's tape or medical tape. It's finer, comes off easier, and is easy to work with. I always have it handy when training so I can act quickly if something does break. But your plant will now strengthen other shoots and will still give you good buds. :)
