In essence, while a larger leaf will have more stomata in total, it's the stomatal density (how many are packed into a given area) that is more crucial for gas exchange and is often lower in larger leaves. Defoliation, or the removal of leaves, will reduce gas exchange and subsequently impact the daily light integral (DLI) that a plant receives, especially in the context of photosynthesis. Defoliation. Always nice to make yourself feel like your being useful, like a hairdresser styling your plants. Stop. Don't do it. There are times to do it and times to not do it. Unless your doing some defoliation to trigger defensive responses at right time in flower, all your doing now is reducing plants capacity to process energy and exchange gas. Plant is hardwired to get rid of any leaf that is not pulling in its own weight, soon as a leaf uses more energy than it produces the plant will begin the process of recycling the nutrient then detaching the leaf itself double time. All you really wanna do is expedite whay you already know to be larf later in flower. Only way to really grasp that is to watch the plant defoliate herself? See what was worth cutting and what wasn't, then next time you grow you will have an idea of what you can expect and cut accordingly. Not end of world but delayed a week or so.
