when canopy is as large as the pot.. should see some roots portruding, but not wrapped around several times - that's waiting too long. if the medium is moist, there should be zero concern of the rootball falling apart -- because of moisture and roots holding it together. Not all plants are on the same schedule. If you have no concerns about the rootball falling apart, it's good enough to pot-up.
