if the white pistiles are from newer growth calyxes, i'd more heavily weigh the ripeness of the bulk of growth.
do you want 80% of the plant to be less than ideal for 20% of the plant to catch up? (rhetorical and making up random numbers just as proof of concept)....
Depends a lot on your assessment of the situation... i wouldn't sacrifice the bulk for a small portion of total.
for some people, yield may be of ultimate importance, andin that case you may want to wait for it all to ripen, but thne you have some portions of plant that are quite a bit different that other portions of the plant etc...
So, this depends on your personal preferences to some extent and your greater understanding of the details.
I'd also give a gently inspection under the buds anywhere a sugar leaf has died at an unusual rate.. .can sometimes hint of an infection underneath. No fuzz on stem = no problem.
