At Week 11 of bloom, heavy foxtailing and those new white pistils are usually a sign of heat or light stress rather than a sign the plant needs more time to "bulk up." Since the buds already feel airy, keeping it going might just result in more leafy growth instead of denser flowers.
Here is my take:
• Check your trichomes: This is the only way to be sure; if you see mostly milky with some amber, it's time to chop.
• Stress check: If your lights are too close or it's too hot, that's what's triggering the new "second" growth you're seeing.
• Don't wait for white hairs: In cases of stress-induced foxtailing, the plant will keep throwing white pistils forever, so don't use them as your harvest guide.
If the trichomes look ready, I'd say harvest now before the quality degrades further!
