Have you ever heard of contactless LST? this is it! the direction of the plant is given by the light source and the location of the pot in relation to it.

I was wondering. are you going for slow growth on purpose?
How about leaving the fan leaves in place and only removing the side branches for training? It would give a much faster growth rate that way.
