Well, if you take off half the canopy, i bet those RH spikes go away or at least attenuated. the plant is what is creating the moisture, so if you remove half the foliage, it won't put out as much moisture.
Staggering is an option. Just don't expect it to impact yield or anything, and you can make an informed choice about it. Is it worth you extra effort? is the extra electricity worth it? these are mostly personal choices because the outcome is only slightly different.
"amber" is overripe. Even the milky/cloudy is the first sign of degredation. Having "some" amber is just about the overall average. If you want to do a staggered harvest, i woudln't wait for too much amber ontop colas.. take when they are all milky and a few amber. I also like the glassy vs plastic trigger.. when trichomes are glassy, it's too early.
