Start of week 2, everything looks fine, and the plant seems to be "recovering" from the initial problem of one cotyledon being a bit "weird".
[UPDATE day 14]: it's the end of the week, and yesterday - while bringing her back indoor for the night - I noticed it has started to have a very (very!) weak smell. My other plant (Fat Banana Auto, in her 3rd week, doesn't smell at all). Well, I hope this is a good sign! 😊
The plant looks amazing to me, even though I'm starting to fear it's not growing much (at least, judging from other people's diaries on this strand). Fingers crossed! And see you in the 3rd week 😎

Which pH & ppm details should I use to fill in the diary's info? Should I use the readings from the run-off, or from the water before I gave it to the plant? (I suppose is the former, but asking just to be 100% sure 😎)

Hi!
Yeah you are correct, you mark the readings form water before watering. But it might be useful to tell the readings from the run off too and you can maybe put that info on the comments.

Been having a prob where the run-off readings are higher than the input ones:
IN 1lt water + 1ml of Canna Vega | pH: 6.9; ppm: 381; EC 772 µs/cm
OUT pH: 5.6; ppm: 964; EC 2,006
Soil is 9L Biobizz Light Mix, and prob still contains nutes. What should I do? Flush the soil?

There’s always going to be to be high EC/PPM in soil - it’s not a coco so shouldn’t be a driver for you. Buildup of old nutrients flushed with new - that’s why your readings are high.
