Day 1 starts when?

I count two weeks after flip as week 1 of true flower, they take time to transition, it’s Kyle lush and rule of thumb

I class day 1 of flowering when the pistils turn white.

It depends on the breeder guidelines. Some count flowering from first signs of flowers forming, other from the first day you switch to 12/12 for photos. The reason some wait to count flowering after 12/12 is it depends on the strain/genetics of if it'll show any flowering in a week or up to 3 weeks. The day you flip to 12/12 is the first day of flower. The moment the plants notice the change of light they start to produce hormones which tells it that it’s time to stretch. Good luck bro 💪
