These plants are 20 days old ! They are thick and stocky they seem very healthy! My question is what should I do from here . Currently in .75 gallon pots I don’t think there root bound yet I don’t see any roots sticking out the bottom !.. should I transfer them now and start LST

They look great! Rule of thumb is once the plants as wide as the container it's time to transplant. You could definitely wait a week to do it. Some like to gradually uppot I'd just go for the final size container now sometime this week.

The general rule of thumb is when the plant grows to the edge of the pot it is time to re-pot. You do not wait for them to be root bound as that harms their growth and yield. If you have the room why bother with smaller pots at all? Just grow in their large, final pot size if you have the space. Then you have no transplant shock.

You can decide. I usually go for a 3 true leaf node rule before starting to bend. I've bended earlier before but might have stunted it a bit. It's also good to try and time LST just before the stems harden (start of veg). So they can harden to the desired shape.
