More than just where leaves intersect.. it’s on any branch where it splits and shoots off a new branch. Young plants from seed will usually have two branches at each node grow from the main trunk of the plant. As they mature, nodes grow staggered. If you’re struggling to grasp this in any way - a simple Google search with images will help likely more than any written explanation

A node is defined as a point in which pathways intersect. In the case of growing; nodes are where new leaves intersect. Further example: as my plants grow I like to start of stress training at the 5th node. This means that I will let the plant grow until looking up the plant I have 5 intersecting points of growth (nodes). I hope this has helped, happy growing!
