The temperature will effect how the plant matures and grows which does cause plant issues which can damage terpenes. Everything from humidity too high , lights to close, heat to high in flower over 80 degrees can make the flavour profile deminish. The strain itself will determine the over all taste and aroma adding bud boosters can add a sweet smell to the buds if you like that . I would say for turning them amber quicker cold temps would do this as it's simulating autumn environment pushing them quicker into flower or producing that couch lock high ...good grow..
