you're close enough and your canopy is strong enough (perfect isn't the threshold) that you can give it water only without issues. Saving time and convenience can be a good reason to do it, but don't think it changes the biological processes involved in building molecules related to ripening or cell maintenance.
mineral content doesn't change and taste is not discernably different according to blindt taste tests. People 'feel' it makes a difference, but so far failed to prove it. The responsibility of proof is on the person making the hypothesis. They have done a poor job proving it, lol.
