My “coly” leaves are folded shut, almost like a duck bill, no seed, and I’m able to gently separate the leaves apart, but it “snaps” right back down. Should I leave it alone and hope for it to grow out of it? Or should I intervene, and how so?

Don't touch it. You'll do more harm than good. Just let the plant grow and do it's thing and you will be rewarded for your patience.
