Your use of trichomes as the indicator for ripeness and when to harvest is correct.
You may want to chip the top half of the plant first as it will be ready at the top first before the base.
I like to aim for anywhere between 10-30% amber, but closer to the 10%.
Your photos still have some Clear mixed in with Cloudy and they are not quite ready.
If your top buds in the main cola are all ready nice and ambery chop the top bit off and let the rest ripen for a week or so.
All three plants will have there own ripening schedule. So if one is ready and the rest are not. Don't sweat it.
