No you defoliated enough!
As long as the leaves do not stack on eachother and leave a good airflow through the plant. And leaves are not blocking the rest from the plant below it there is no reason for further defoliation!

Sorry, but not even close. Three weeks I would say. There's still lots of white pistils coming out, and it hasn't bulked up yet. You want no white pistils, swollen calyxs, and brown pistils should look like theyre bending over and or receding.
And dont flush. Flushing is a complete myth...100% bro science. Start feeding again and then try to keep the plant as healthy as possible (ie, keep feesing her) until you chop.
