Unrelated to this grow but a question none the less. Is it a thing to harvest individual branches of a plant? i.e. Can you harvest the tops and let the lower buds mature more?

Absolutely yes, a lot of people will harvest their tops and give the rest a chance to grow. The lower buds may not always benefit from this.
Each plants is different, so keep you eye on the hairs and tricombs of the lower buds.

My early finisher is dropping seeds now that it's mostly dried out. Coulda sworn I had 3 females but...?
I've heard of Hermaphrodite plants; I'm guessing that is what happened. Not sure if it is genetic thing or if certain cultivation practices cause this?

Seeds from hermaphrodite plants will carry dominant genes or being hermaphrodites too.
Not good unless you are trying to breed a line of hermaphrodite plants!
They WILL NOT be feminized.
Hermaphrodites are generally the first (genetic) step backwards in reversion to hemp.

Know what you mean about uncertainty around chop chop time. Even knowing the info about most the hairy bits turning brown and the trichomes going from clear to milky (which Iβm struggling to differentiate), itβs not as obvious a decision as I read all over the internet. Think Iβm going to wait until I see the very first amber trichome and then chop. Good luck with yours
