pH has gotten back to where it should be. Haven't even had to use the pH up and down I purchased. There's been a little removal of a couple dying leafs.

Yes, If your plant starts getting so bushy that no light is making it down to the floor through the plant, it's time to “clean” the bottom of the plant. First start by removing any tiny growth tips on the lower part of stems that will never be able to reach the light anyway.

Curious on drying temps. I'm fairly confident I can keep humidity where I need it but living in Minnesota and coming into winter, it's about 68° inside. Pulling in outside air would be far too cold. Is 68° too high for drying?

The ideal temperature for drying cannabis should be between 60 and 70°F, with a relative humidity for drying cannabis sitting between 45% and 55%, so if you're at 68 °F now you're still in range and it's not too high, just make sure to not go over 70°F because If the temperature is too high during the drying process, it can cause the buds to dry too quickly, leading to a harsh smoke and undesirable taste.

One plant has plenty of lovely visible trichomes on the leaves, while the other is lacking in such (does have some). Anything to worry about or change? Both plants seem healthy and fine otherwise. Understand it's likely natural and the other will catch up. 2nd week flowering.

There's nothing to worry about at all, every plant grows differently and if both plants are healthy then it's going to have to do with different phenotypes, one of them must have just produced more trichomes.
