Super unusual smell. Unlike anything I've smelt before. Can't quite put my finger on it. Strong and sharp. Can't detail on the flavour until she's cured a while as its still a little harsh which I expected. I only flushed for a week as she caught me by surprise. I will update after curing for a few weeks ๐
