Should I defoliate after LST to open space to the buds?

If you wanna defoliate i would wait for flower week 2 or three. The plant is in need to produce sugar while in vegetation stage, so don´t start too early. I would defoliate the lower half of leaves when in second flower week and 20 days later defoliate the upper leaves so she has enough leaves left for producing energy till the buds are done developing.

Did I overwater my girl? Are these down leafs a signal of it?

It helps when we can see good quality pictures such as yours. I'd also agree that you've over watered. In the event you are unsure you have different options to find out your watering schedule for the specific strain you are growing. Keep in mind each plant is different. You can weight your pots when dry to give you an idea of the weight then water and figure out how many days in between. Second you can wait until first sign of your leave also wilting as they are now which can also mean to require water. It's best to avoid over stressing your plant but you'll get into a pattern and then you'll get the feel for it. For now, let the soil dry to help expedite the process have some extra air circulating and move the soil around without disturbing the roots, you may only be able to mix the first 1-2" at the top.

Hi @Bartholomeu! Yes it seems that you over-watered your babies. Make sure to weight the container every time before considering watering: you will then be able to guess the amount of water left in the medium. Roots need to be on a wet/dry cycle to ensure a healthy development, they tend to expand when they're searching for water, so you don't want a 100% wet medium neither than a 100% dry medium, but a little bit of each, with quick rotations. Hope this will help, keep us up-to-date and happy growing! 👊

Hey @Stick, thanks for your hints. Soil is really "airy" with my Perlite / Spaghnum / Carbonized Rice Peels and I did check before watering whether soil was or was not wet.... and It was completelly dry, reason why I've poured some water. I've been adding 1 liter, 1 liter and a half every two days, meaning something like 0,8L/day.

0.8 liters a day of water in a 3 liter pot? Yes you are over watering, by a lot. A liter of water should last you from 3 days to a week, before needing water again

So, just came home to check into my girls, and same. Top leafs are somehow curling. I decided to take my 3in1 (ph, light, moist) meter into the pot... and.... DRY. Sticked my finger into it and.. DRY. The soil is not damped, far from that, so I started wondering, is it possible that it's only phenotype? I've heard recently that there's a specific Pheno that resemble the effect of a wheat branch "Polyploidism Polyploids are individual organisms that possess a greater number of of chromosomes than is normal for the species they belong to. Polyploidism underlies the phenomenon of hybrid vigour, where crosses of two closely related species display higher yields and improved resistance to drought or disease. For example, durum wheat (used to make pasta) is a polyploid form of wheat created via an inter-species cross of two grasses with the typical chromosome count." https://sensiseeds.com/en/blog/top-10-craziest-cannabis-mutations/
