Couple of reason: i) reservoir too small, so any small change in solution concentration will greatly impact the pH. This will happen as the plant takes water and nutrients in different ratios than what you put in the reservoir.
Since probably you can't increase the reservoir size, you could try to buffer the pH: put both pH up and down so to stabilize the pH against said changes.
