The plant already give off a powerful and tasty smell they look very healthy. I had to do some defoliation so that the light reaches all the buds.

I am noticing that many parts of the plant do not receive enough light. Would you recommend cutting any more knots? (I do not know if it is advisable to prune any branch more once the plant is in flowering) or simply remove a couple of leaves.

You are only a week into flowering,that's nothing,you can remove any branches or fan leaves blocking the light of course.But in your case,plant's internodal distance looks short,so I wouldn't remove branches.Only remove some fan leaves and you'll be fine.Just don't remove all the leaves :D you can keep doing it until harvest,only a few leaves each time.Give them some time after defoliating,observe as branches getting bigger and bud sites forming buds,you'll decide better which leaves to remove this way.

You just gotta love when they start packing on weight and giving off that wonderful smell. Your plants are looking good and healthy.
