At this point I thought the problem was from over-watering, but would later determine it to be light burn from not being familiar with the SF-2000 light or LEDs in general. The light burn stunted their growth completely, which in-turn caused them to use water far slower than normal, and convinced me it was an over-watering issue because they would never dry out.
Once I eventually figured out the LED burn was the issue, the plants started drying out much faster and drinking water at a normal pace.

Don't think they should be deficient in anything yet, they're in new Ocean Forest soil and only on day 11 of veg, no way they used up what's in the soil yet.

This is damage caused by the leaves hitting either the edge of the pot or the soil surface when the fan blows on them and generally at night when the leaves are lowered. Nothing much to be concerned over.
Filling your pots right up to the top would give more room for root growth.

I agree, looks like mag. Be careful when removing leaves as if the deficiency is not corrected she will start taking nutrients from another leaf. Causing more damage to the plant. I'd leave them on for a a little longer in future. You can cut the dead bits off without issue, if you like.
