That's some odd growth for sure! The grow medium looks pretty moist, which would be good for a lot of light, soilless mixes but may be causing issues if its too damp and drowning the roots. I also noticed in the first week you were running at a pH of 5, and an EC of .9. The EC would be a bit high for a typical soilless mix that early, and very high if it was already premixed with nutrients (I would have to know more details on the mix you are using). But the biggest standout is the pH of 5. That is really low in my opinion, and could cause cal-mag to not be utilized by the plant. Because cal-mag is an essential nutrient for growth, I believe it's lock out is causing the twisted growth patterns. I would bring the nutrient mixture down to the .6ec range and adjust the PH to around 6, and flush through the grow medium with plenty of runoff. Then try to keep it around those levels while with a good wet/dry cycle for the little plants (they won't drink much at that age) and I would hope more regular growth will emerge. Happy growing! 🌱👍
