Strangely, you will have to give her a good drink to save her!
Pulling her out was probably not the best thing, but now that she has been, she would have suffered some root "trauma" which is why she is droopy and now needs the extra water to save her from dying from dehydration. She will hopefully recover soon enough, but probably just as long as if you had left her alone in the first place.
I am not sure what made you think that the "over watering" was so bad that she needed rescuing, but being in coir, it is pretty hard to kill a plant by drowning. At this stage she will need an evenly moist substrate with deep watering to make sure water availability is adequate while she gets her roots sorted out from being "traumatised" during the transplant operation.
