When is it time to cure

At what point in the drying process is it cure time? I hang dried for a week in 63 temp and 54RH with good air flow. I can snap the stem, but still It’s stringy. Now they are in brown paper bags hanging in climate controlled tent.

Sounds to me like you're pretty close. 10-14 days is a good estimate of time, and it might be taking longer with the higher RH. 45-55% is acceptable. If your smaller stems are snapping clean off and no longer stringy, then it's a good bet that your larger stems are ready as well

As soon as I have an audible snap or crack when bending stems they get jarred up and the curing begins for me
